Delicious chocolatey cake, rolled up and filled with mascaprone and cream – guaranteed crowd pleaser.

6 eggs
100g flour
100g sugar
1-2 tbsp cocoa
1/2 tbsp red food coloring

1/2 cup heavy cream
1/2 cup mascarpone
1/2 cup icing sugar sugar
2 tsp vanilla extract

Preheat oven to 365 and line a 9×13 pan with parchment paper.
Separate the eggs and add the sugar to the yolks
Cream yolks and sugar until white and fluffy (5-8 minutes)
Sift in flour and add food coloring
Incorporate all ingredients into a smooth dough
Fill the 9×13 pan and bake for 10 minutes
Once baked, dust with powdered sugar and roll
Let the cake chilled in its rolled up shape
Whip up the heavy cream until stiff and add the mascarpone, sugar and vanilla
Whip into smooth cream
Unroll cooled dough
Spread cream evenly across the inside
Roll back up and chill for at least 30 minutes
