Here’s one of my favorite soup dishes, Pigtail Corn Soup! This is the ultimate comfort food. Here’s what you need to complete the recipe:

2 1/2 lbs of salted pigtails (chopped & boiled 3 times- 75 minutes in total)

2 cups of flour + salt + pinch of sugar + 2 tbsps coconut milk powder + water

1 cup of green seasoning (season the pigtail with 1/4 and use the rest in the soup) – mine had 12 leaves of bandhania, 2 heads of garlic, 2 hot peppers and 5 pimento peppers

1 tablespoon of soy sauce

2 tablespoons of ketchup

generous sprinkle of black pepper

2 cups of chopped pumpkin

sweet potato


green fig/banana



2 carrots, grated

1 sweet pepper, diced

1 onion, diced

4 corns on the cob, chopped

1 cup of chopped celery leaf

2 stalks of scallion/chive, chopped

half can of coconut milk

1 tablespoon of oil

2 tablespoons of brown sugar

1 pack of Grace pumpkin flavored soup

1 tablespoon Golden Ray butter
