Rainbow Cashew Icecream
1 cup raw cashews, soaked for 3-6 hours
300g coconut cream*
1/2 cup maple syrup
Pinch of vanilla
1 tsp each blue spirulina & pink pitaya
1. Rinse cashews. Blend the cashews, coconut cream, maple & vanilla until silky smooth.
2. Split into two small bowls. Colour each bowl with either of the pink or blue.
3. Gently spoon the blue mix randomly into the pink, and gently run a knife around it to mix colours
4. Freeze until firm enough to scoop! *if your coconut cream has seperated just give it a quick blend to bind back together
