This is our entry for Jamie Oliver’s Search for a Food Tube Star with Uncle Bens Competition Kayak Kedgeree.
Rice & fish are perfect Camp Breakfast Partners and after an early morning paddle in a kayak. A warm hearty easy meal is just the thing needed to sustain us on our trip home. You dont need a Kayak to enjoy this Kayak Kedgeree but they do go well together.
We do hope you give it a try.
2 packets of Uncle Bens Express Spanish Rice
1 diced onion
1 clove finely chopped garlic
125 grams smoked cod
2 hard boiled eggs
25 grams butter
handful of parsley
1 spring onion
1 teaspoon curry powder
2 bay leaves
salt & pepper to taste
natural yoghurt to serve
fresh water to cook fish and steam rice.
Heat water with Cod and bayleaves. Cook about 10 minutes until tender. Drain Fish & discard water. Flake fish with forks into bite sized pieces & set aside. To the pan add butter, garlic, onion, curry powder and pepper. Saute a few minutes until translucent add Uncle Bens Express Spanish Rice and a little water to steam. Place the lid on. Cut the boiled eggs into 8 wedges, chop herbs. Stir rice to break up any lumps and mix with curry onion mixture. When heated through allow water to evaporate, add fish and parsley, spring onions to the pan and heat through. Adjust seasoning if necessary. Lay boiled eggs on top and serve with a dollop of natural yoghurt.
