how to make kulcha or amritsari kulcha easily at home by chef nikita

INGREDIENTS

6 boiled potatoes
3 medium size onion
ginger 1tbsp
green chillies 4
garlic 1 tbsp
salt to taste
black salt to taste
dry mango powder 1 tbsp
coriander powder 1 tbsp
cumin powder 1 tbsp
carom seeds 1 tbsp
kashmiri red chilli powder 2 tbsp
handful coriander leaves

4 cup refined flour
2 tbsp sugar
salt to taste
baking soda 1/4th tsp
yogurt 1/2 cup
warm water for making a dough
ghee or butter

METHOD –

STEP 1 :-

take a bowl and add
6 boiled potatoes
3 medium size onion
ginger 1tbsp
green chillies 4
garlic 1 tbsp
salt to taste
black salt to taste
dry mango powder 1 tbsp
coriander powder 1 tbsp
cumin powder 1 tbsp
carom seeds 1 tbsp
kashmiri red chilli powder 2 tbsp
handful coriander leaves mix it well.

STEP 2 :-

TAKE A BOWL ADD
4 cup refined flour
2 tbsp sugar
salt to taste
baking soda 1/4th tsp
yogurt 1/2 cup
warm water for making a dough . knead well to make a dough.
now keep it aside for 1 hour and then layer it with ghee and fold from ll four sides atleast 7 times. then take a portion of dough fill the mixture and press it to form a kulcha shape and then apply water and keep it on high flame on a hot tawa. then flip the tawa onto flame and cook it .

STEP 3 :-

serve it hot by applying good amount of butter with chole and condiments you prefer .
