'This is one of the cakes that would be waiting for us at our Auntie Elsa’s when we arrived in Italy for the summer holidays. The smell of cinnamon and apple would waft through her house, and whenever we make it, we are transported back there. It is a great alternative to a traditional apple pie'. – Simply Italian

Very simple to make and delicious:

100g unsalted butter
200g plain flour
800g sweet apples (peeled and cored)
zest and juice of 1 lemon
2 medium eggs
200g brown sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon fine salt
200ml milk
1 teaspoon vanilla extract
