Makes me effing mad to already see these companies trying to flog the post Christmas weight loss fix in the way of slimming pills and detox teas and even more mad that celebrities are endorsing them! ? As celebrities or influencers it’s our responsibility to ensure we are as real and relatable as possible and I for one really care about my followers and their wellbeing. There is no chance on earth you will ever see me promote that bullshit on here no matter how big the pay check. I may not be as popular these days due to actually getting a LIFE! But I still want to set a good example and inspire people to make healthier choices. So remember… usually anything labelled with DETOX or SLIMMING should set your Bullshit detector off ?? Please enjoy your Christmas and some treats but remain consistent with a healthy diet the rest of the time. It’s the only way you will reach your body/health/wellness goals ??
So brings me on to these deliciously soft fluffy strawberry muffins?the perfect festive treat to enjoy while watching a cosy Christmas movie on the sofa with your loved ones ? An old favourite in my house. Hope you enjoy ❤️ Recipe;
2 cups of spelt, wholewheat or all purpose gluten free flour
1 cup of soy or cashew milk
2 tsp of baking powder
1/4 tsp baking soda
1 tsp of apple cider vinegar
1/2 cup of melted coconut oil
1 tsp of vanilla extract
1/2 cup of coconut sugar ( I pulsed mine in the vitamix to make it extra fine for perfect muffins. Alternatively you can use regular sugar )
1 1/4 cup of chopped strawberries (or 3/4 cup of freeze dried strawberries )
First add the apple cider vinegar to the milk and allow to curdle for around 10 mins. In a separate bowl add the dry ingredients and mix well. Then mix in the vanilla coconut oil and milk. Gently stir until well combined and you have a nice cake batter consistency. Lastly fold in the chopped strawberries. Pour the muffin mixture into lined muffin tins about 3/4 way up so they don’t spill over. Bake for around 20-25 minutes until nicely browned and cooked inside. Enjoy ❤️
