This omelette recipe is one of my absolute favourites. Packed with nutritious kale and squash plus creamy ricotta cheese it’s so simple to make and will keep everyone in the family happy. It allows babies to explore new flavours and develop their pincer grip and for the older kids and adults a sprinkling of parmesan and a generous dollop of salsa make it super tasty.
