?Hi and welcome to the first upload in our new Foody Friday series! Each Friday we aim to bring you a new, simple recipe that you can cook in the comfort of your own home!
This week it’s Chinese chicken and potato curry!
This recipe easily serves 6 people so adjust accordingly.
To get started you will need:
1kg Chicken breast
1kg Baby new potatoes
1 cup (about 4 small) onions
2 cups (about 170g) Frozen peas
300g Goldfish brand Chinese curry paste. Available in Tesco or buy it here:
2 TBSP oil (I used Rapeseed)
900ml boiling water
Salt & Pepper to taste
To begin you will need to chop and boil your potatoes in a pan of salted water.
Next, you need to chop the onions and after heating the oil in a frying pan, add your onion and fry until softened.
Now chop the chicken breast into bite sized pieces. Add your chicken breast to the pan with the onions and fry until cooked.
Meanwhile mix the curry paste with the boiling water until it makes a smooth sauce.
Pour the sauce over the chicken and onions then add the cooked, drained potatoes and the frozen peas to the pan.
Season to taste with salt and pepper and then cover and simmer for around 10 minutes ?
