Chinese Chicken Meatball Soup (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Serves 2
Ingredients:
100g Mince Chicken
1 Medium Potato
1 Spring Onion
½cm Ginger Roots
1 Clove Garlic
3 Stems Coriander
½ Tsp Ground White Pepper
1 Egg White
1 Tbsp Cornflour
1 Tsp Sesame Oil
600ml Chicken Stock
Salt to Taste

Methods:
1. Finely chop the ginger, garlic, spring onion and roughly chop the coriander.
2. Cut potatoes into about 1cm small cubes.
3. Mix the minced chicken with egg white, salt, white pepper, cornflour, half of the garlic and ginger. Mix contents well.
4. Dust your hand with plain flour, take 1 Tsp of the mixture and roll in the palm of your hands to form a ball.
5. Heat half a litre of oil in a pan and deep fry potato cubes for 5 minutes until golden then drain.
6. Heat 1 Tbsp oil in a wok and fry ginger and half of the spring onion for few seconds.
7. Pour in the stock and bring to the boil.
8. Add meatballs one at a time, potato cubes and a pinch of salt into the stock and cook on low heat for 15 to 20 minutes.
9. Add the other half of spring onion and coriander and stir.
10. Transfer into a dish, drizzle sesame oil, garnish and serve.
