Chinese Chicken Noodle Soup. Simple and delicious. Shanxi style noodles. Shanxi are denser than noodles that I usually eat. I had these Shanxi style noodles when I visited Xi’an and nearby areas in China. This recipe would be delicious with any kind of noodles. Cilantro is a nice, light vegetable which works well with this tasty soup. Recipe is below:
Chicken Noodle Soup With Shanxi Noodles
2 to 3 cups soup stock
1 1/2 cups Chinese noodles
1 1/2 cup cups cilantro
3 to 4 oz. cooked chicken (85 to 113 grams)
1 teaspoon sesame oil
To make soup stock: In a large pot, add water. Add chicken and pork bones. Add 2 thumb size pieces of ginger. Add cloves of garlic and stalks of green onions for extra flavour. Simmer at low to medium heat for minimum 1/2 hour. Usually good to boil soup stock at least 1 hour. You can make the soup stock ahead if you like.
To boil noodles, bring a pot of water to a boil. Add 1 teaspoon salt. Put noodles into the boiling water. My Shanxi noodles took 5 to 7 minutes to cook. Other types of noodles require different cooking time. Rinse noodles briefly in cold water.
Rinse cilantro in cold water to clean. You can use cooked chicken or raw chicken for this recipe.
In a pot, preheat 2 to 3 cups soup stock for 1 portion. Whern soup stock is boiling, add noodles, chicken and cilantro. Serve chicken noodle soup in a nice bowl. Add a dash of sesame oil before serving. Enjoy!
