Achi Soup Recipe: How to Prepare Delicious Achi Soup/Onyx Food Hill

Achi soup is a simple thick soup cooked with a thickener known as achi; it is one of the easiest soups in Nigeria just like Oha soup and Egusi soup. Achi soup is very tasty and flavorful, you can adjust the texture to the way you want and can add different meat to make it meaty.
A simple addition of uziza leaf adds additional aroma and taste to this soup, however you can use bitter leaf, ukazi or pumpkin leaves if you prefer any of these, hence you will have something like (ach soup with bitter leaf), (achi soup and Ukazi).

This flavorful soup can be served with any starchy bolus such as ebe semolina or pounded yam.

Ingredients for preparing achi soup

1. ½ kg of goat meat
2. ½ kg of goat offal (assorted meat)
3. 1 medium kpomo (cow hide)
4. 1 cup of stockfish
5. 1 medium smoked fish
6. 2 tablespoons of ground crayfish
7. 3 seasoning cubes
8. 1 large onion, chopped
9. 2½ tablespoons of ground achi
10. 1 handful of shredded uziza (½ cup)
11. 1 tablespoon of ogiri
12. 2 cooking spoons of palm oil
13. 4 scotch bonnets or ground cayenne
14. Salt to taste
