Thanks to my sister as she’s expert in south Indian dishes !! Salem style sambar powder !! And sambar rice is coming soon !! Ingredients :
Pigeon peas (toor ki daal )
Chick peas ( chane ki daal )
Coriander seeds
Cumin seeds
Black pepper corn
Fenugreek seeds
Turmeric
Dry red chillies
Hing (asafoetida)
Mustard seeds
Method :
Roast the red chillies,stirring them till they change colour and u can get their pungent smoky aroma …
Stir and roast all the spices …till dey become fragrant and change the colour it just takes 1 to 2 minutes in a low flame to roast these ..
They could smell aromatic ..
Switch off the flame now add hing in the pan ..quickly stir as soon as u add hing ..just the colour needs to change of the hing ..and u should get its aroma …remove and keep aside ..
Now let all the spices cool down and come to room temperature in your grinder jar, add the spices bring it to a fine powder …
Once the sambar masala cools at room temperature, then spoon it carefully in a jar …close tightly with a lid and keep at room temperature.
